Okay, so for some of you vegans out there, you’ve probably had vegetable soup. In fact, I can imagine you’ve probably had a ton of them. But this is new to me (for clarification, I’m not vegan but once a week, I go completely meat-free. I’m also working on going completely dairy-free once a week.)
I’m battling a cold and I learned the last time we had illness in the family, the best remedy was to go completely vegan and vegetarian and eliminate as much dairy as possible. Since I bought a ton of veggies the other day, what better way to battle my illness was go completely meat-free.
Even though I followed this recipe, I was quite simple. The goal for me was to make it as colorful as possible. My only regret was I didn’t have anything purple so I might need to pick up purple cauliflower or asparagus next time. I used mushrooms, carrots, spinach, tomatoes, and yellow bell pepper.
Results:
I should’ve used a bit more spice; ti was actually way too tame for my taste in comparison to the chicken soup which my husband absolutely loved.
I have to say making homemade vegetable soup was very easy and I wondered why I just brought soup at the store instead of making it at home. I mean this was cheap and easy! Incredible!
